Looks Good Enough to Eat: Welch Rarebit

The Welch rarebit at St. John. Melted cheese flavored with beer,
mustard, and cayenne broiled on homemade white bread.

So much you can do with the notion of rarebit. We recently made a sort of rarebit souffle using some leftover stout and a good Irish cheddar. Easy, perfect with toasted bread and an interesting twist on a theme.
